This chef knife features a 7.5" san mai blade, forged from a lamination of 200-year-old wrought iron, 15n20 steel, and 1095 high carbon steel.  The handle is made from stabilized spalted birch, found on Deer Isle, Maine, and also includes steelbronze composite fitings, and a laminated spacer.  This blade is exceptionally thin for the size and is a very keen slicer.
